As it turns out, I have a weakness for both condiments and truffles. Luckily, I found one umami-rich kitchen ingredient that checks both of these boxes. While mayo often gets a bad rep, there’s nothing negative about this stuff, which is made with organic eggs and sunflower oil, and it also just so happens to be gluten-free.
