- Meat & Beans: Ground beef, chicken, or turkey are perfect in homemade burritos. Buy or make homemade refried beans and freeze them for future recipes.
- Seasonings: Buy it or make homemade taco seasoning and adjust the ingredients just the way you like. Plus, you’ll have extra to use as a rub for steak fajitas or to season Mexican corn.
- Cheese: Any shredded cheese works, but a Mexican blend, crumbled cotija, or Monterey Jack are great starts.
- Tortillas: Large flour tortillas will hold up the best in this recipe. Corn tortillas work too, but might work better as tostadas using the same ingredients.

- Veggies: Add diced tomatoes, brown or white rice, quinoa, bell peppers, shredded lettuce, sliced olives, jalapenos, or green chiles.

- To keep your tortillas from becoming soggy, let the beef mixture cool slightly before assembling, and be sure to layer it on top of the refried beans.
- To prevent the tortillas from cracking, try warming them slightly.
- For easy rolling, use approximately ¾ cup of filling. Don’t overfill the burritos!
- For the perfect crispy exterior, don’t skip the step of browning them in a skillet.

Storing and Reheating
Wrap leftover beef burritos in plastic and store them in the refrigerator for up to 4 days. Reheat them in the microwave or bake them in the oven for 20-25 minutes at 350°F.
To freeze, simply wrap cooled burritos in foil and transfer to zippered freezer bags for up to 4 months. Thaw in the refrigerator.

Beef Burrito Recipe
The beef burrito recipe is an easy, tasty & filling weeknight meal.
Prep Time 25 minutes
Cook Time 20 minutes
Total Time 45 minutes
- 1 pound lean ground beef 80/20
- 1 small yellow onion finely diced
- 1 ounce taco seasoning 1 packet
- 2 tablespoons chopped fresh cilantro optional
- 6 large flour tortillas warmed, 12-inch
- 16 ounces canned refried beans 1 can, warmed
- 1 ½ cups shredded pepper jack cheese

In a 12″ skillet set over medium-high heat add ground beef and yellow onion.

Cook the meat until it’s no longer pink and the onions are translucent. Drain any fat.

Add in the taco seasoning and prepare according to the packet directions.

Stir in the cilantro (if using) and remove from the heat.

Lay out the flour tortillas and spread a layer of refried beans into the middle of each tortilla.

Top each tortilla with an equal amount of the meat mixture and shredded cheese.

Roll up each tortilla burrito-style and enjoy warm.

Optional: Heat a non-stick skillet over medium heat. Add burrito seam side down and cook 2-3 minutes or until slightly browned. Flip over and repeat with the other side.
I kept this recipe simple but if desired add sour cream, tomatoes, jalapenos, or other favorites into the tortilla before rolling.
Keep in mind raw vegetables don’t freeze well.
Keep leftovers in an airtight container in the refrigerator for up to 4 days.
